Alaskan Halibut (with Cherry Tomato Sauce) Cherry Tomatoes

Ingredients
1 pound Alaskan halibut fillet4 tablespoons blackening spice
2 tablespoons olive oil
3 ounce arugula
Procedure
- Cut Alaskan halibut into 2 equal parts
- Season both sides with blackening spice, then pat fish with fingertips to help make seasoning stick
- Lightly coat frying pan with olive oil, then heat pan
- Place fish in hot pan one piece at a time and brown on both sides
- Place fish on baking sheet and put in oven at 350 to 375 degrees for 5 minutes (be careful not to overcook)
- Place fish on plate and pour cherry tomato sauce on top
- Add a few leaves of arugula, douse again with sauce and serve
