Alaskan Halibut with Cherry Tomato Sauce





Alaskan Halibut (with Cherry Tomato Sauce) Cherry Tomatoes

Ingredients

1 pound Alaskan halibut fillet
4 tablespoons blackening spice
2 tablespoons olive oil
3 ounce arugula

Procedure

  1. Cut Alaskan halibut into 2 equal parts
  2. Season both sides with blackening spice, then pat fish with fingertips to help make seasoning stick
  3. Lightly coat frying pan with olive oil, then heat pan
  4. Place fish in hot pan one piece at a time and brown on both sides
  5. Place fish on baking sheet and put in oven at 350 to 375 degrees for 5 minutes  (be careful not to overcook)
  6. Place fish on plate and pour cherry tomato sauce on top
  7. Add a few leaves of arugula, douse again with sauce and serve
